Some Quality Parameters of Unpackaged Raw Milk Sold in Elazığ

In this study, 75 samples of raw cow milk sold in Elazığ were analyzed for total mesophilic aerobes, total psychrophilic aerobes, coliform, Enterobacteriaceae, Staphylococcus-Micrococcus, yeast-mold, fecal streptococci, LLP, lactic streptococci, E. coli and coagulase positive S. aureus, resazurin and phosphatase tests, acidity (% lactic acid), dry matter, and ash. In addition, the samples were analyzed for fat, non-fat dry matter, specific gravity, protein, freezing point, and somatic cell counts by using milkana device. In addition, the fermentation test was applied for the analysis of carbonate, salicylic acid, formol, potassium bichromate, hydrogen peroxide, boric acid, and antibiotics that could be added for fraudulent purposes.

Results showed that none of the raw milk samples complied with the criteria specified in Cow Milk (Raw) Standard- TS 1018 in terms of the total number of mesophilic aerobic bacteria. In addition, E. coli was detected in 26 (34.67%) samples and cogulase positive S. aureus was found in 25 (33.33%) samples. The 15 (20%) samples examined were dry matter, pH, acidity value (lactic asid), non-oily dry matter, specific gravity, carbonate, salicylic acid; it was observed that none of the 75 (100%) samples complied with the limits in terms of freezing point analysis. Frequent inspections of street milk, which are sold unpackaged, are very important for the protection of public health, both for the protection of human health and the production of products suitable for technology.
